The single-vineyard varietal Hondarribi Zuri 2023 Iri comes from a plot planted in 2009 on sandstone, silt and iron soils at a higher altitude, which tends to deliver a mineral and sharp wine. It's a fairly large vineyard, close to five hectares, the last vineyard they harvest. It fermented with indigenous yeasts in stainless steel (since 2025 in concrete) and matured with the lees for six months. In 2022 and 2023, the wine went through full malolactic (in the past it was only partial), and that gives it more weight. They never added any sulfur dioxide in this wine during the process, not even at bottling time. The wine is open and relaxed, expressive and aromatic, nuanced and complex, with beautiful notes that remind me of a tender wine from Jura, with some spices, herbs and echoes of baked apples, revealing a faint oxidative profile. It comes in at 12% alcohol, with a pH of 3.1 and a bone-dry finish. 5,000 bottles produced. It was bottled in June 2024.
