Univers Palomino Fino
The entry-level white is the 2023 Univers, produced with old Palomino from 0.9 hectares in Miraflores Baja, which is in the process of obtaining organic and biodynamic certifications because they purchased it in 2022. After pressing the full clusters, it was vinified in 3,000-liter iron vats that are lined with ceramic, where it rested with the full lees for 11 months, the only one like that. They work with full lees in all the wines; they don't want to rack the wines, as they want the lees to nurture the wines. It has a golden color and a spicy nose with notes of cloves, a balsamic hint. It has 12.5% alcohol, 2% more than in 2022, with a pH of 3.56 and 5.3 grams of acidity. It has concentration and a round palate, but the character of 2023 shown here is that there is high salinity and also a chalky texture (there's a lot of tosca limestone in the soils here). They are precise, always working with natural acidity, never acidifying. It was bottled unfiltered—they don't filter any wines; they clarify with bentonite. This is the gentler expression of Palomino, a wine with more fruit, with a toasted cereal component emerging with time in the glass. 4,160 bottles were filled in July 2024. The 2025 will carry the organic certification.,,
