-- Parker: The current release of the NV Entre Ciel et Terre Extra-Brut is based on the 2006 vintage and assembles 60% Meunier with 30% Chardonnay and 10% Pinot Noir from the villages of Crouttes-sur-Marne, Nanteuil-sur-Marne and Villiers St-Denis. Fermented and aged in oak (15%) and enameled tanks, then disgorged after eight years sur lattes in April 2015, this straw-yellow colored cuvée displays a very clear, deep, fresh and elegant, well defined bouquet. It develops with every minute and every glass. Floral, vegetal and herbal flavors, hints of caramel, nuts and honey intertwine with ripe, dried and potted white and yellow-skinned fruit aromas—indicating a lovely vinous style. Clear, fresh, precise and elegant on the palate, this is a stimulatingly dry and pure, well-structured and finesse-full Champagne with a kicking grip, salinity and mineral expression in the finish. Great purity, freshness and straightforwardness. If it should be a Bedel today, then right now it should be this one. As aperitif and for dinner.
