Ein Sherry Fino aus Jerez vom Macharnudo-Weinberg (Manzanilla wäre es wenn er aus Sanlucar stammte), Palomino Fino auf Kalkstein und Kreide gewachsen. Eine Auslese aus Willi Perez besten Lagen, händisch Rebe für Rebe in der ersten Septemberhälfte ausgesucht und geerntet. Danach etwas Malaga-Stil, Trocknung dere Trauben in der Sonne und dann als Gaztaube vorsichtig gepresst und der Saft im Holzfass (bota) spontan fermentiert und 10 Jahre ohne Zugabe von externem Alkohol unter der reduktiven Florhefe ausgebaut. Danach nochmal 6 Monate oxidativ weiter ausgebaut, das verleiht im noch mehr Massivität und Sattheit und einen Touch Amontillado. Best of both worlds! Nussig, salzig, ölig, Ingwerschärfe, Zitronengras, Kamille, leichter Bitterstoff und dazu geniale Frische aus fast 6 Gramm Säure bei nur 15% natürlichem Alkohol. Genialer Stoff, extrem limitiert.

This shows walnuts, flowers and subtle spices with chamomile and dried lemons, but the nose is austere. Layered and multidimensional with persistence and concentration all the way to the end. Unfortified. Drink or hold.

Again made with fruit from Carrascal, the Villamarta is a Fino-amontillado which undergoes ten years of static ageing with flor. Lees stirring every two weeks brings structure to the mid-palate, and there is a lovely weight and velvety smoothness here. Classic aged Fino characters of apple skin, beeswax and quince with a complex, layered finish, at once chalky and salty. Very fine.

The 2015 Villamarta Tres Palmas Viña El Corregidor comes from a single cask left untouched for 10 years under flor. Over time, the veil gradually fades, leaving the wine stripped to its essence while preserving the imprint of its long biological aging. The 'Tres Palmas' designation marks precisely this threshold before Amontillado. Hazelnut, soft caramel, saffron and antique wood define the nose. Dry and remarkably saline, yet at the same time subtly concentrated and textural, it captures the paradox of extended flor aging. Chalky texture sustains the finish, where a faint lacquered note lingers.
