Lobenberg: La Servil, benannt nach dem Großvater, liegt in Fuente auf 960 Metern Höhe, West- und Nordexposition auf Sand, Kies und tiefgründigen Kalkstein. Gemischter Satz ungepropfter Originalreben, Monastrell mit Moravia und diversen anderen Reben, zu Beginn der fünfziger Jahre gepflanzt. Das ist Cerrons erster biodynamisch zertifizierter Weinberg. Der Weinberg hat einen extrem tiefen PH-Wert, also Frische satt schon vom Terroir. Tiefrot, sattes Kirschrot mit schwarzen Reflexen. Frisches Fleisch und Erde, Blut, Eisen, wilde Schlehe und würzige Schattenmorelle. Fast schmerzhaft intensiv, Chili, Piment, schwarzer Pfeffer, Feuerstein. Im Mund genial eleganter und zugleich wilder saftiger Fluss, hochintensive Krautwürze, Sauerkirsche, Schlehe, Grenadine. Stramme Frische von Pfeffer und pinker Grapefruit, leicht bitterer Stein im intensiv salzig steinigen Nachhall. Ein fruchtiges Mineralmonster, dass nach Essensbegleitung schreit, kühl trinken zu Rind oder Schmorgerichten. Ziemlicher Dampfhammer, auch wenn die Tannine durchaus seidig sind.

Jahrgangsbericht

Der Ausnahme-Jahrgang 2022 gilt in Spanien als historischer Meilenstein. Trotz Rekordhitze bestechen die Weine dank kühler Sommernächte mit verblüffend tiefen pH-Werten, spektakulärer Säurefrische und seidigen Tanninen – eine grandiose, perfekt balancierte Dichte auf Augenhöhe mit dem großen Bordeaux-Jahrgang.

-- Tim Atkin: La Servil Monastrell comes from two vineyards, between 60-70 years of age, at 960m planted on mostly limestone soils. An astonishingly fresh and pretty wine with rose petal, red cherry and raspberry fruit, it offers enough depth and density to give the palate enough grip and grunt. With a slatey backbone and a touch of dark chocolate from 12 months in 500-litre French oak, it is both light on its feet and offers impressive intensity. Modern Jumilla whose character lies in the region’s origins. 2024 - 2030

-- Parker: Like in 2021, the 2022 La Servil had a shorter maceration—a constant in all the reds—which they believe keeps more of the character of the places. It fermented at highish temperature and had a long élevage in large oak foudres for 20 months. This has a serious profile; it was a bit closed at first (a constant in the 2022 reds) but opened up nicely in the glass to subtle floral aromas, notes of blood orange and juicy fruit and is faintly spicy, with notes of aromatic herbs. It has a medium-bodied palate with 14% alcohol but contained ripeness, and it shows the complexity of the different soils and expositions with depth and harmony. This comes from 11.9 hectares of old vines, a large vineyard on sandy soils with some marl and limestone mother rock. They produced 15,000 bottles. It was bottled in March 2024.

-- Weingut: 2022, a Mediterranean vintage. A cold winter with two episodes of intense snowfall, with accumulations of up to 80 centimeters, provided good water retention in the soil profile. A third episode of snow occurred on April 6th, delaying flowering. The spring was rainy (300 liters) and cool until the start of a long, dry summer with high temperatures during the day and cool nights. A rain episode on September 12th and 13th resulted in a perfect balance between ripeness and freshness. Servil comes from a beautifull Mediterranean forest site located in the Fuente-Álamo area, characterized by limestone soils composed of sand and gravel. This environment is home to old vineyards planted on ungrafted rootstock, creating a Mediterranean wine that is fresh, fluid, and austere with earthy tannins. The name 'La Servil' comes from an expression of our grandfather, who used to say that the grapes from this site were 'Muy Serviles.' This area, situated at a considerable altitude, features deep calcareous soils resulting in wines with low pH levels and good ripeness. These grapes, among the last to be harvested, arrived at the winery without the need for artificial additives. The low pH levels, high acidity, and alcohol content allow for a natural winemaking process, with minimal use of sulfites. The philosophy of working in this way highlights the authenticity and uniqueness of the wine and its landscape.
