La Cabana
The first vintage and the beginning of it all, the 2021 La Cabaña is a field blend with a perfumed and beautiful nose with notes of orange peel and decayed flowers. This is the first vineyard they bought, a plot at 925 meters above sea level, and this is the first wine and first vinification, the reason they decided to stay here. The soil is very rocky, shallow and poor, with limestone bedrock. The vineyard was closed by a wall in this part, but now only one part of the wall remains. 2021 was slightly cooler than 2023, and the wines have a lot of tension. The élevage was also longer, two years in a new 500-liter Rare François Frère barrel, which doesn't show in the aromatics at all now. With time in the glass, it developed notes of thyme and pine trees, pretty much the vegetation around it, and it's herbal but not green or stemmy. This is plain beautiful. It's ready now but will keep developing in bottle. The 12.8% alcohol reflects good ripeness. In 2022, they didn't bottle it separately. In 2021, they produced 550 bottles that were filled in October 2023.
