Lobenberg: Dieser klassische, trockene Manzanilla reift für rund neun Jahre im Fass unter der Florhefe. Danach wird er unfiltriert abgefüllt. Intensive, komplexe. aber sehr klare Nase von gesalzener Mandel, Heu, Walnuss und Hefe. Auch frische Komponenten wie Blutorangenschale und gelber Apfel schwingen mit. Etwas braune Butter und Rohrzucker, dadurch wirkt die Nase fast ein bisschen süßlich. Im Mund dann aber eben überhaupt nicht süß, sondern sehr typisch Manzanilla in dieser knochentrockenen, salzigen Art. Dabei aber auch überraschend fruchtig und extrem klar mit feiner Säureader, guter Bitterkeit und Frische. Ein unkomplizierter, weicher Sherry, ein perfekter Aperitif zu Nüssen und Oliven. 94/100

It has some varnish and nutty aromas, taking it toward a Manzanilla Pasada in terms of complexity and depth. This is a great wine, with an average age of nine years. There are 10,000 bottles released per year, and every year is now specified on the back label. 94/100

-- Weingut: Stumbling across a winery plot like Barbadillo’s is quite something. If you were to wander through the large and small buildings, the gridded doors, the bricks, the old asbestos roof tiles, the detrital limestone ground and even the streets that have all been named accordingly, you would find yourself being taken on a journey through history. A journey that will have you asking, what happened to Pastora? Where did she end up? The Manzanilla missed her, so too did the old drinker, almost the oldest of them all. Pastora is an aged Manzanilla that has undergone a long process of biological ageing, and that was deeply rooted in the Solear solera before going on to occupying a very specific area of the La Pastora winery, facing towards the river, right on the embankment that divides Sanlúcar’s upper and lower quarters. This winery is the ideal environment for biological ageing.
