Parker über: Sherry Manzanilla Pasada Pastora unfiltriert

-- Parker: There is a new Manzanilla from the masters of the style, the first new brand they release since they revolutionized the marked with their 'en rama' bottling. The NV Manzanilla Pasada en Rama Pastora differs from the Solear en Rama exclusively in the winery where the wine is aged, as it's bottled at a similar age, around nine years, and bottled untouched. This Manzanilla ages in the Pastora winery, but the wine is the same as the Solear. They are looking for a similar wine as the Solear en Rama and it is quite similar, but not exactly the same; the wine here feels a tad heavier, with more shoulders, a little wider in the palate. It's a matter of details. They will produce some 10,000 bottles per year in different lots, but the back label will mention the year of the bottling (and if you're into deciphering codes, L16-046, the lot, will tell you the day it was bottled). 93/100

Suckling über: Sherry Manzanilla Pasada Pastora unfiltriert

-- Suckling: An intense Manzanilla with sour dough, seaweed, cooked yellow apples and roasted cashews. Rich and smooth with a tangy, flavorful center-palate and a long, subtle finish. Drink now. 92/100

Weingut über: Sherry Manzanilla Pasada Pastora unfiltriert

-- Weingut: Stumbling across a winery plot like Barbadillo’s is quite something. If you were to wander through the large and small buildings, the gridded doors, the bricks, the old asbestos roof tiles, the detrital limestone ground and even the streets that have all been named accordingly, you would find yourself being taken on a journey through history. A journey that will have you asking, what happened to Pastora? Where did she end up? The Manzanilla missed her, so too did the old drinker, almost the oldest of them all. Pastora is an aged Manzanilla that has undergone a long process of biological ageing, and that was deeply rooted in the Solear solera before going on to occupying a very specific area of the La Pastora winery, facing towards the river, right on the embankment that divides Sanlúcar’s upper and lower quarters. This winery is the ideal environment for biological ageing.
