Celler Battle Brut
-- Weingut: The winter and early spring were dry, followed by a few weeks of rain and high temperatures that favoured oidium and mildew. In the vineyard, we worked hard to control the damage. Yields were 15% below the average of the past few years and the predictions for the long-aged sparkling wines were excellent. Grapes were harvested by hand, before passing through a second selection at the sorting table. The fruit entered by gravity into the press and the coupage was decided by tasting, just before the bottles began secondary fermentation, corked with natural cork, in February 2015. Each stage of the process was carried out by hand, including racking and disgorging. The aromas of ripe fruit give way to endless notes of ageing, such as breadcrumbs, brioche, toasted hazelnuts, cinnamon, vanilla... On the palate it is a powerful sparkling wine, full of nuances and with an excellent balance between freshness and maturity.
