Gallinas y Focas Manto Negro
The wines from their joint venture with the Fundación Esment are also included in this report. The main one, and the initial result of their collaboration, is the 2022 Gallinas y Focas, produced with 100% Mantonegro grapes from old vines in Binissalem. It fermented in a semi-carbonic maceration way with indigenous yeasts and matured in 4,000-liter oak foudre for 12 months and in 500-liter oak barrels for 18 months. Carbonic fermentations are like life insurance in warm years, and 2022 was very warm. In warm years, they also work the soils lightly (in March) and don't work with cover crops. The wine is floral and perfumed, sapid, fine-boned and vibrant, with very good freshness for the conditions of the year. It has good ripeness (Mantonegro is the only grape from Mallorca that can achieve high alcohol), 13.5% alcohol and a pH of 3.85, reflecting the warmer year. It's a triumph over the conditions of the year and going in the direction of the 2021, showing some development. 10,000 bottles produced. It was bottled in December 2025.
