The 2021 Barbaresco Pajè Vecchie Viti is the most delicate of the Barbarescos in this range from Luca Roagna. As with the Vecchie Viti Barolo, the emphasis here is on floral, savory notes. Aromatic, sculpted and layered, this is all subtlety and nuance. Dried herbs, mint and orange peel build over time. The transformation in the glass over several hours is quite simply mesmerizing.
