De gamle, uforplantede vinstokke på Hill of Grace (Gnadenberg) er over 150 år gamle. Over 87 procent af den 18 måneder lange modning foregår i brugte 300-liters hogsheads, der hovedsageligt er fremstillet af fransk (84 procent) og en lille andel amerikansk eg. Dyb, strålende rubinrød farve. I modsætning til den pulserende krydrethed i den ved siden af smagte Mount Edelstone er Hill of Grace en dansende eller endda yndefuldt svævende, betagende yndefuld skønhed – og samtidig fyldig og overdådig i sin frugt. Duftende brune krydderier som muskatnød, kanel, et strejf af vanilje og tonkabønne spiller sammen med delikate røgaromaer, stadig varmt stearin, tjære og lidt cedertræ. Svævende, tørrede urter og et svagt strejf af tørret eukalyptus stiger op. Frugten er modnet til perfektion: Modne noter af cassis, sød brombærcoulis, sort kirsebær og koncentrerede vilde blommer, men også spændingsfyldte frugter som slåen og hibiskusblomster dufter fra glasset. Denne vin behøver ikke længere at bevise noget for nogen. Den er hverken højlydt eller ultraopulent, men derimod ubeskrivelig elegant, nuanceret og drilsk. Den formår at imponere, som kun en Maria Callas kunne – dog hvisker den charmerende og sensuelt. I munden er koncentrationen af saftig frugt helt enestående. Så uovertruffent saftig og alligevel næsten vægtløs. Ligesom Heston Blumenthals berømte rødbede-canapé, der synes at forsvinde i munden og alligevel formår at efterlade et unikt, evigt varigt indtryk. Tanninerne er modne og fløjlsagtige, næsten cremede, og vinens langvarige friskhed genklanger jævnt selv i den betagende lange eftersmag. Sort peber, lakrids, 100 % chokolade og en skiferagtig, dybt røget mineralitet samt krydret allspice kærtegner tungen. Jeg smager vinen, når den er fem år gammel – endnu er det de primære frugtaromaer, der dominerer. Selvom alle komponenter allerede er vidunderligt samspillede, vil vinen uden tvivl vinde yderligere i finesse og kompleksitet. Hill of Grace udvikler ikke sjældent en fortryllende duft af hvid trøffel, efterhånden som den modnes på flaske. For at opleve dens sande perfektion fortjener denne vin mindst yderligere fem år i kælderen, før den åbnes. Dette er en stor vin, der som næsten ingen anden står for koncentreret elegance. I dette unge stadium kan man dog kun ane det komplette, storslåede spektrum af dybde og aromaer. Perfektion kan her endda være en underdrivelse – Hill of Grace er ganske enkelt enestående.

The 2021 Hill of Grace Shiraz comes from a vineyard that sits at 400 meters above sea level—a beautiful, remote-feeling place. The vineyard is picked block by block, defined by vine age, soil types, elevation and position within the vineyard. The older vines within the vineyard tend to hold their acidity and retain lower pH with higher natural acidity than the younger vines, which also assists in determining the parcels. "Ironically, this is the simplest wine to make; it's the vineyard that produces the wine like this. It's due to the work in the vineyard over many generations," says Stephen Henschke. So, to the wine. It is pure and fine, with a languid pool of fruit that is characterized by black silty tannins and persistent, seamless length. This speaks of the ancient place, the rocks, the vines. This is just a magnificent, graceful wine here, one that is "immune to hyperbole," as they say. 14.5% alcohol, sealed under screw cap. The Wheelwright vineyard has 50-year-old vines, Mount Edelstone is over 100 years old, and the ancestor vines in the Hill of Grace vineyard are aver 150 years old.

Incredibly fresh and refined, with deeply brooding notes of dark plums, mocha, graphite, five spice and cured meat. The palate is ultra-refined and pure, with balanced acidity, seamlessly integrated tannins and a creamy texture, showing complex notes of mulberries, cassia bark, pepper, violets and licorice. It is truly exceptional, and is an icon of Australia for a reason. Made from vines that are over 150 years old. Brilliant. Drink or hold. Screw cap.

I was lucky enough to taste the Henschke single-vineyard releases from the heralded 2018 vintage, which Johann's father Stephen Henschke called 'the standout vintage of the decade'. Is the 2021 already the standout of this decade? Time will tell, but it's another latent rippling, muscular beauty, already teasing us with the further complexity and elegance still to come. Opulent, heady perfume of blue forest fruits, blood plums and raspberries – amazing fruit purity and vibrancy – joined by lifted florals, black pepper, incense and sweet baking spices. The tannins are firm but superfine, the oak present but not obtrusive, and the finish almost endless, with lingering pepper zip and wet stone freshness. Unlike the 2021 Mount Edelstone, this isn't anywhere near ready to broach, but give it a few years (better yet a few decades) to see it fulfil that potential.

How long will the 2021 Hill of Grace age for? How long is a piece of string? An exceptional year like 2021 is almost a law unto itself, one where anything is possible age-wise given both the complexity of the wine and its already seamless presence in the glass. It makes quite an impact from the first sniff. Where to start? Oozes class in super fine, intense dark plums, blackberry, liquorice, vanilla, sweet tobacco, woodsmoke, briar and florals that shine in violet and deep florals. The palate has a deep richness, not boldness but in the kind of concentration shown, and it is unctuous and totally charming. American oak (16%) is part of the oak regime together with French oak (84% new) with a total of 13% new hogsheads. This is the usual oak treatment and it works well in both elevating the fruit and providing the kind of strong, fine tannins required for the long journey ahead. And, rest assured, there is a long journey to come.

This outstanding 2021 Shiraz Hill of Grace is a confident young wine built for the long haul in a punchy package that is still tightly wound. It is starting to reveal some of its charms with rocky, licorice, blackberry, and dried herb aromas. The palate is quite extraordinary, particularly the quality of tannins, pithy texture and strident composure, which drive a finish of extreme length and are all accented by deep minerality. The 2021 is a star in the making and easily the best vintage since 2018.

Australia's most famous single vineyard, from one of its most treasured longest standing wine estates, this latest release from the outstanding 2021 vintage offers just what collectors of this special wine have come to expect: an exceptionally poised and classy wine that sings of its site and history. Lucid-yet-concentrated aromas of plump plum, blackberry, Chinese Five spice, along with a vegetal tang, open. There's density to the palate, acidity padded into the rich, satiny texture and ultra-fine tannins. Still in its nascent stage, this it set to go down in the history books as one of the great Grace vintages.
