Tresor Saumur Brut Flaschengärung
This is the most widely available of Bouvet Ladubay's more upper-class cuvées, made using the méthode traditionelle, an distinguished from Saphir by the first fermentation and the élevage being in oak rather than stainless steel. It is 100% Chenin Blanc, with no malolactic fermentation. It has a fine straw hue in the glass, and a vigorous bead. The aromatics clearly communicate the fine quality of the 2015 vintage, a warm year, the chalky limestone quickly followed up by more generous scents of peach, apricot and kumquat fruit. This core of fruit is framed on the palate not only by a softly crumbled limestone minerality, but also some supremely fresh acidity, particularly welcome when you consider the warm and generous nature of the vintage. Overall, this presents a wonderful contradiction of ripe fruit and limestone bite, fresh and taut, with a very long finish. Still vaguely foamy and youthful, I am sure this is going to get a lot better over the next couple of years, but I wouldn't hold back now if you find a bottle. 94/100
