Raventós' unique 'blanc de noirs' – a blend of three red varieties Xarel-lo vermell, Sumoll and Bastard Negre (Graciano), although Xarel-lo vermell is not really a red variety but a pink-skinned clone of Xarel-lo. Stony soils at the top of the Serral hill. A totally fascinating, original creation, this is less about mineral tension and more around an intriguing aromaticism of black plum, peach and liquorice, supple with its fluffy mousse and careful extraction but hiding a vein of dark bread and apricot intensity. Almost a rosé by some measures, it's beguiling stuff.

This is an intense and serious sparkling wine that shows excellent depth, concentration and complexity. Pie crust, biscuits, sour cream and minerals with a touch of glazed lemon loaf. Broad and full-bodied with intense mousse and a lasting, saline finish that goes on for more than half a minute. Generous but extremely serious. From organically grown grapes. Drink or hold.
