"Les 7" står for de syv godkendte druesorter i Champagne: Chardonnay, Pinot Meunier, Pinot Blanc, Petit Meslier, Pinot Noir, Pinot Gris og Arbanne. De står i faldende rækkefølge i cuvéen, og det hele vokser på en ler- og kalkstensparcel i Chavot på Coteaux Sud d'Épernay. Dette er derfor en cuvée, der indeholder alle de druesorter, der er tilladt i Champagne! Familien fandt dem i netop denne parcel. En absolut sjældenhed og en lille lektion i Champagnes mangfoldighed. Fra og med 2005-årgangen blandes basisvinene ved hjælp af solera-metoden, som ellers kun bruges til sherry. Hvert år efter aftapningen tilsættes ca. 60 procent ung vin til de resterende 40 procent reserve. Årgang 2021 er i øjeblikket basen og soleraen fra 2005 til 2021. I glasset er der en let gylden champagne, der dufter af frisk smør, flint, rød te og varme citrusfrugter som appelsin og mandarin. På ganen er vinen fortsat enormt udtryksfuld og kompleks. Meget præcis, altid klar og strålende. Også fordi den ikke rystes af en grov perlage, men afsluttes meget roligt i ganen. Urtearomaerne fra Meslier og Arbanne giver vinen en meget krydret accent sammen med den elegante frugt fra de andre druesorter. Meget fin, men alligevel helt karakteristisk.

Savory nose of vibrant, salted lemon zest, together with butter and white chocolate, enhanced by strawberries in depth. Full-bodied with silky mousse, super savory character, integrated acidity and a chalky mineral-driven aftertaste. 10% pinot gris, 18% chardonnay, 18% pinot meunier, 17% pinot blanc, 15% petit meslier, 14% pinot noir and the rest arbanne. Disgorged in 2022. Dosage 4g/L. Drinkable now, but it will last 10 years at least, improving the complexity.

The NV Champagne Les 7 Extra Brut takes things to a whole other place and is highly compelling. The nose is lightly toasty and shows off layered complexity and length, with its initial notes of wild herbs and fennel followed by more mature notes of brine, toast, sand, and organic forest coming through as it opens. It has a fine and refined mousse with a balanced freshness. Drink 2026-2045. This was made with perpetual reserve from 2005 through 2021 (they always refresh the solera with 50% of the current vintage) with all seven varieties. Disgorged in October 2024.

The NV Les 7 non-dosé (05-15), a blend of the seven grapes permitted in Champagne, is another super-distinctive wine in this lineup. Creamy, resonant and super-expressive, Les 7 is so intriguing. Hints of dried pear, mint, flowers and citrus open up with air, but Les 7 is a rare Champagne that engages all the senses with its captivating detail, textural richness and persistence. I loved it. This release is 60% 2015 and 40% reserve wines. The seven varieties are co-fermented, with blocked malolactic fermentation, and disgorged with no dosage.

Disgorged in February 2018 without dosage, the NV Extra-Brut Les 7 is based on the 2015 vintage, supplemented by 40% reserve wines from a solera established in 2005. The wine is showing superbly today, unwinding in the glass with aromas of citrus rind, Anjou pear, paraffin wax, pastry cream, peach and white flowers. Medium to full-bodied, racy and incisive, with an elegantly fleshy core of fruit that's complemented by a pillowy mousse, it's bright and precise while avoiding any austerity. The blend consists of 10% Fromenteau, 8% Arbanne, 14% Pinot Noir, 18% Chardonnay, 17% Pinot Blanc, 18% Pinot Meunier and 15% Petit Meslier, planted in 2003 as a field blend.
