Med 32 hektar egen ejendom er Bruno Paillard mere eller mindre en hybrid mellem vinhandler-champagne og de større maisons, lidt ligesom Deutz. Selv om en stor del af druerne kommer fra hans egne vinmarker, er Paillard stadig en maison, der køber druer fra langvarige partnerskaber. Paillards far var allerede druemægler, og familien har omfattende kontakter og ekspertise i denne branche, hvilket også forklarer husets hurtige fremgang. Basiscuvéen fra Paillards boutique-ejendom er et benchmark hvert år. Lav i dosering og elegant i udtrykket. Man kan se, at basisvinen har set lidt træ på den substans, den udstråler. Varm butterdej og kvæder i næsen, vinmarkens fersken og en antydning af frisk smør. Stram og saftig i munden med den mineralitet, der er så typisk for Paillard, meget lige og alligevel med en elegant smeltning fra den gule stenfrugt bagved. Et strejf af hvid peber kildrer tungen med et hint af ristet sesam. Den efterfølgende lagring på over 2 år efter degorgeringen giver også vinen en fantastisk kompleksitet for en non-vintage champagne. Stor klasse!

Suckling om: Champagne Première Cuvée Extra Brut

Lemon bush and lemon zest with pure strawberries, mirabelles, white pepper and a hint of shortbread. Fine mousse with good concentration and full body and zesty, lemony acidity. Tight-knit structure with a super-polished finish. 45% pinot noir, 33% chardonnay and 22% pinot meunier. Disgorged in 2023. Dosage 5.5g/L. Drinkable now, but it will achieve more complexity with aging.

Wine&Spirits om: Champagne Première Cuvée Extra Brut

One-fifth of this wine fermented in barrels, further enriched by reserve stocks in the blend. The finesse of the bubbles creates a cashmere feel out of that richness, layering toasty notes of age with a spark of freshness in the wine’s lime and limestone savor (it has the fossilized oyster-shell impression of a great Chablis). Deliciously complex, it may make you hungry for an oyster.

A golden straw hue, this edition of the NV Champagne Première Cuvee Extra Brut comes from the 2018 base vintage, with 20% barrel fermentation. Attractive on opening, it’s fresh with balanced aromas of almond croissant and fresh peach. Medium to full-bodied, it displays plenty of elegance and graceful appeal, revealing a fine mousse, an approachable nature that’s very well-balanced, and a great finish. I love to drink this wine when I am on the road, as it’s widely available and a great value, and this edition is no exception. Drink 2023-2030. 5 grams per liter dosage.

Lemon, grapefruit, green pears and flowers are some of the many notes that are woven together in this classy, totally polished wine. The two-plus years of bottle age post-disgorgement are a great example of how first-class NV Champagnes can develop beautifully in bottle, something I have seen time and again with Bruno Paillard's wines. Hints of hazelnut, almond, crushed rocks and pastry add elements of complexity, yet the wine retains its classic sense of energy and vibrancy. This is a great showing. The Brut Premiere Cuvee is 45% Pinot Noir, 33% Chardonnay and 22% Pinot Meunier.
