Les Pavot er den første vinmark i Knights Valley, der blev plantet af Sir Peter Michael. I dag er Bordeaux-blandingen vingårdens flagskib. Med en perfekt sydvendt beliggenhed 300 til over 400 meter over havets overflade på Mount St Helena er mikroklimaet meget køligere end i Sonoma-dalene. Jorden her er stenet med masser af grus - perfekt til især Cabernet Sauvignon. Modnet i 18 måneder på fransk eg. Denne storslåede vin har simpelthen en vanvittig kraft! Dyb rubinrød i glasset med violette nuancer. Næsen er allerede dyb og intens. Moden cassis, søde blåbær, mørke blommer og sorte kirsebær med en fin syrlig, næsten aromatisk note, der minder om frisk hø og tobak. Duften af varm rød jord stiger op af glasset. I munden er den gribende, tanninen er moden og velstruktureret. Vanilje, cigarkasse, laurbærblad og middelhavsurter blander sig med den sprøde frugt. Den kølige beliggenhed sikrer også en god syrestruktur, så Les Pavots er fyldig, men ikke tung, alt er i balance. Dette er allerede en stor vin, men glem den gerne i kælderen i et par år, for om fem til ti år vil den være en sand fornøjelse. 97-98/100

This is a powerful red with blackberry, black olive and a hint of mint. Some brown sugar, too. Full-bodied and dense, with lots of fruit and velvety, plush tannins. Crushed-stone and wet-earth character, too. The higher percentage of merlot (14%) and no cabernet franc makes this unique for Les Pavots. Give it three or four years to open. 97/100

Soft, caressing and stylish on the expressive nose. There’s a lovely delicacy to the violet and peony florality generously woven around and intermingling with the blue and black berry and stone fruits. A little touch of wild rosemary too. All very enticing. In the mouth the tannins are incredibly gentle, ultra-fine-grained and yet not inconsiderable. The wine is deceptively dense and compact with the softness of the tannins serving to disguise the power at first. But in the end, and with more air, there’s no mistaking the sheer depth and concentration of this wine. It’s rather more Margaux aromatically and Pauillac on the palate! Refined and elegant despite its power and concentration, this is a most exciting new release on la place 97/100

Notions of plum preserves, creme de cassis, and fruitcake slowly emerge with swirling, leading to hints of pencil lead, charcoal, and garrigue. The full-bodied palate has firm, grainy tannins and just enough freshness to support the rich, generous fruit, finishing with a peppery lift. 95/100

The 2020 Les Pavots is made up of 83% Cabernet Sauvignon, 14% Merlot and 3% Petite Verdot and includes fruit from some of the oldest vines at Peter Michael, planted in 1989. Unusually, there is no Cabernet Franc in the blend this vintage, as it was affected by the wildfire smoke. Deep ruby-purple in color, it is shy to begin, taking time to reveal pure red plums, chocolate, graphite, green bell pepper and tobacco leaves. The medium-bodied palate offers generous, alluringly herbal fruits, a luxurious, silky frame and seamless acidity, finishing long and latent. It develops dramatically in the glass, suggesting it will require a few hours in the decanter to show at its best. 1,910 cases were made; this will be released in February of 2023. 95/100

The 2020 Les Pavots is 83% Cabernet Sauvignon and pours an inky red. It reveals a wonderful herbaceous profile of forest herbs, with a more mountainous feel and aromas of pine, menthol, ripe black cherry, and cedar. Full-bodied and more muscularly structured, with dark earth, turned forest floor, blackberry, and tea leaf, the tannins on the finish feel a touch drying at this stage but balanced out with sweet fruit to cushion it. Drink 2025-2040. 95/100
